Peanut Butter Bombs

I have recently been experimenting with a lower carbohydrate diet for myself. Even prior to my study of Dietetics and nutrition, I have always used my body as a guinea pig for different styles of eating.

With this, I have been looking for recipes which aren’t high in carbohydrates; which has been hard, because dates seem to be in more ‘bliss ball’ or ‘protein ball’ recipe.

Until I came across a recipe by my friend Kylee (from the Raw Baller @rawballer on IG). She has these amazing treats that she sells in cafes across Brisbane.

For this recipe, I have adapted one of her recipes (Velvet Balls) and added in a few gut-loving ingredients to make me more functional for me.

Ingredients:

  • 1 cup peanut butter (I like smooth but crunchy would work as well)

  • 1/4 cup maple syrup

  • 1 tbsp. coconut oil (melted)

  • 1/3 cup desiccated coconut

  • 30 g Protein Powder (I used Rich Chocolate from PranaON)

  • 1/4 cup cacao powder

  • 2 tsp. Gut Right from ATP Science

Method:

  1. Add the dry ingredients to a food processor.

  2. Mix for ~10-15 seconds until the mixture is spread.

  3. Add in the peanut butter + coconut oil and lightly blend.

  4. As the coconut oil will start to set, roll the mixture into balls swiftly and place into a container in the fridge.

Makes ~10-12 balls. Lasts up to 10 days in the fridge.
